Rinse and trim the fresh artichokes and put the chokes (or the hearts) in cold water with lemon juice in them.
Chop the onion and the oregano (if fresh), put them in a bowl, add ground beef, bread crumbs and an egg. Season with salt and pepper and mix well. set the bowl aside.
Turn the oven on medium- high heat and boil a cup of water.
Chop the second onion and garlic. Fry them in a small pan until golden. Add tamarind paste, sweet soy sauce and a cup of hot water. Stir the mixture and bring it to boil. Lower the heat, taste the mixture and correct the seasoning.
Dry the chokes and stuff them with the meat mixture. Put them in a baking dish and pour the hot sauce on them. If have too much meat mixture, you can form into meatballs or stuff onions and add them to the baking dish also.
Put the dish in the oven and bake for about an hour. While baking, you can pour the sauce over the chokes to moisten them. Serve hot with white rice.
